Our story

Since 2008.

One kitchen's idea of the Konkan coast, repeated faithfully across twenty rooms.

01The founder
“Karnataka is my Janmabhoomi. Maharashtra is my Karmabhoomi.”
Adarsh Shetty — Founder & Chairman, Golden Fork Hospitality

Adarsh Shetty is a South Indian who has lived in Maharashtra a very long time, and Maharashtrian cooking holds a particular place for him. He started Malvan Tadka in 2008 with one intention: to put the finest, most authentic Malvani food in front of people — particularly a younger generation across India who had never travelled to the Konkan to taste it.

He intends to take the brand further in franchise mode, into commercial spaces such as malls and airports. Nayna Shetty has been felicitated alongside him for the brand's work.

02The cooking

What makes it
Malvani.

Malvan sits on the Sindhudurg coast, and its cooking is built from what grows and swims there.

Coconut

Fresh and dry, grated and roasted. Roasting it dark before grinding is what separates a Malvani masala from every other coastal masala.

Kokum

The sour, plum-purple fruit behind sol kadhi. It does the job tamarind does elsewhere, but cleaner and cooler.

Dried red chilli

Heat you can see in the colour of the gravy. Malvani food is hot by design, not by accident.

The day's catch

Pomfret, surmai, bombil, bangda, prawns, clams and crab. What arrives in the morning sets the menu, not the other way round.

Tawa & tandoor

A rava crust fried hard on the tawa; whole fish packed with masala and sent to the tandoor.

Rice, not wheat

Ghavan, vade and tandalachi bhakri. Rice-flour breads are how the coast eats its curry.

★★★★★

“A hidden gem. Malvan Tadka is a Fabulous Experience. Tucked away in a narrow street off the main service road of airport road, this is a delightful place. The ambience is beautiful and so inviting. The interiors are done up really well and are warm and soothing. The service was quick and attentive. The food was Awesome. We had the thalis and they are highly recommended. The curries were cooked superbly and the items were all good. The mutton curry and the chicken starter were the highlight. A lovely Experience”

“Located in attide hotel, this is a classy place great to family dinners. They have live music which is amazing. The ambiance is very nice. Service is very prompt and professional. I liked the food overall. To start with had the khow suey soup, which although not authentic still was very tasty. The chicken lapeta I had for main course with neer dosa was great. To end the meal, had gajar ka halwa which was good too. Good portion size and pricing is decent for the offering and quality.”

“Good food, great ambiance. Non veg food was better compared to the veg. Wide options of Mumbai dishes. Drinks menu was also good. Platter was enough for 4-5. Live music was there”
